True Confession: I made Monday's Roast Chicken on Saturday for dinner guests, and we have leftovers. Not a bad thing! Another true confession: I never got around to making the pizza for last Friday, so I'll have to circle back around to that one. My apologies.

​

Monday: Roast Chicken and Vegetables

Tuesday: Chicken with Broccoli Slaw Salad

Wednesday: Slow-Cooker "Ravioli"

Thursday: Salade Niçoise or Niçoise Salad

Friday: Meatball Stew

I'm not really feeling the cooking this week, so these are extraordinarily easy dinners. More explicit pizza directions are coming after I get to the store and buy the crust. I hope this helps.

Sorry this is late, but I didn't have to cook dinner tonight! Plus, I really haven't been in the mood to cook. But everyone still wants to eat, so here are the recipes for the rest of the week. I may or may not make them in this order.

Wednesday: Purchased Salad with Meat--maybe salmon this week?

We've been busy with company from out of town this weekend, and the new week sneaked up on me. One thing that didn't sneak in is fall--so much rain, but at least it brought cooler temperatures. All I want to eat when it's hot is salads (not that the guys will go for that), so this weather makes me happy to eat other things.  Several of these recipes result in leftovers, which I think are always a good idea. I hope this helps.

I meant to put this up earlier, but I've had a busy day, from church, to borrowing a truck to haul some stuff, returning the truck, taking banana bread to a new neighbor... the day has flown by. So here's what I've decided to make this week.

This is what I'm planning for dinner this week. But to quote the poet Robert Burns, "The best-laid plans of mice and men often go awry." In other words, life happens. I may change the order as we go, or omit a day entirely if plans change or we have lots of leftovers. Planning is good, but so is flexibility!
