Meat and Two--or Three
According to Wikipedia, meat and three restaurants originated in Nashville and spread from there. Meat and three restaurants generally offer a variety or meats and vegetables from which to choose. When we have meat and two (or three) at home, I choose. Such power.
Sometimes meat and 2-3 is the fastest meal to make. Such was the case with this combination: chicken breasts, asparagus, and mashed potatoes. First make the mashed potatoes.

And now for the chicken and asparagus. I absolutely love mesquite seasoning. Maybe it's a character flaw. Anyway... here's how I cooked the chicken and asparagus.

Olive oil and butter to coat skillet
Chicken breasts (as required)
Mesquite/barbecue seasoning
Asparagus, trimmed

Heat olive oil and butter in a skillet over medium heat. Dust/sprinkle/cover/immerse (your choice) chicken breasts in mesquite or barbecue seasoning. Add to pan and cook until done, turning to cook both sides.

When chicken is done set aside and keep warm. Add asparagus to pan, toss, and sauté for 3-5 minutes. Serve immediately. And yeah, the asparagus will therefore have mesquite seasoning.

Okay, if you want, substitute another seasoning. But mesquite.

More combinations to follow.
