White Beans and Ham (Slow Cooker)

I really got to know this classic southern dish when we served it in the restaurant where I worked at Opryland (moment of silence, please) in high school. Serve this alone, with cornbread, and/or with greens of any kind.

1 pound dry Great Northern white beans

2 cups diced onions

2 teaspoons diced garlic (about 2 cloves)

1 teaspoon kosher salt

1/2 teaspoon black pepper

1 pound ham, diced, or 1 pound ham hock with meat

6-8 cups of water, as desired

Rinse and sort the beans for any pebbles. Add the the rinsed beans, onions, garlic, salt, pepper, and ham to the slow cooker. Add water. Cover and cook on low about 8 hours, until beans are tender. Remove ham bone if used, and pull off the meat. Add meat to the slow cooker and mix. Serve with cornbread and/or greens.
