Caprese Salad on Steroids
This salad is based on one I had at a local restaurant. It includes some of my favorites ingredients: fresh mozzarella, tomatoes (both fresh and sun-dried), fresh basil, artichoke hearts, Kalamata olives, and roasted red peppers over mixed greens. This salad is filling, but if you're extra hungry, feel free to add some grilled chicken or shrimp.
Delizioso!

I serve this as a composed salad--place the greens on individual plates, arrange fresh mozzarella, tomatoes, artichoke hearts, red peppers, and olives. Top with basil. Drizzle dressing over salad.

Mixed greens
Fresh mozzarella slices
Tomato slices
Sun-dried tomatoes
Artichoke hearts, quartered
Hearts of palm, sliced
Kalamata olives
Roasted red peppers
Fresh basil, chopped
Optional: chicken or shrimp

As for the dressing, I originally had this salad with a creamy basil dressing, but have not been able to duplicate same. Yet.
In the meantime, I have tried this with dressings ranging from various vinaigrettes to Olive Garden salad dressing. I'll be trying a new recipe this week and will report back. Until then, use the Italian-ish dressing of your choice.
