Chicken with Broccoli Slaw Salad

This salad can be ready in five minutes, and the flavor reminds me of my childhood in a good way. Plus, it's healthy! Try it—you’ll like it.

2-3 cups chopped cooked chicken breast

1 (16-ounce) package broccoli slaw, undressed

1 (8-ounce) can sliced water chestnuts, drained

1 (15-ounce) can mandarin orange segments, drained

4 scallions, chopped

Salt and/or pepper to taste

Dressing to taste—low-fat sesame-ginger dressing (e.g., Paul Newman’s) or make your own

 

In a large bowl, toss chopped chicken, broccoli slaw, water chestnuts, orange segments, and scallions. Toss with dressing.
