Everything Cookies

These cookies are everything and have everything, if you want them to--follow the recipe as is, omit one or two things, change to different flavors.. Regardless, these cookies are chewy, sweet, a little crunchy, and very slightly savory. Make them now.

For years I shaped cookies with spoons or my hands. Then I caved and bought a cookie scoop. Amazing. I never thought it would make such a difference. If you don't already own one, buy a large one (about 1/8 cup) for these cookies. The only problem is you will want to make more cookies and then you might eat them.

2 cups all-purpose flour

2 teaspoons baking powder

2 teaspoons baking soda

1 1/2 teaspoon ground cinnamon

1/2 teaspoon salt

1 cup butter, room temperature

1 cup granulated sugar

1 cup light-brown sugar, packed

2 eggs

2 teaspoons vanilla extract

1 cup semisweet chocolate chips

1 cup butterscotch or peanut butter chips

2 cups old-fashioned rolled oats

1 1/2 cups sweetened flake coconut, optional

1 1/2 cups chopped pecans, optional

Heat oven to 350F degrees.

Mix flour, baking powder, baking soda, cinnamon, and salt in bowl.

​

In a large bowl, beat butter on medium speed until smooth and creamy. Gradually beat in sugars to combine. Add eggs, one at a time, beating after each. Mix in vanilla.

​

Stir in flour mixture until just combined. Add chocolate chips, oats, coconut, and pecans.

For each cookie, drop 2 tablespoons of dough onto ungreased baking sheets, spacing 2 inches apart.

Bake at 350F degrees 13-14 minutes, until edges are lightly browned, rotating sheets halfway through. Remove cookies to rack to cool.
