Chipotle Corn with Shallots and Thyme

Not that I don't love corn with a bit of butter, but this quick corn dish adds a bit of heat with chipotle and depth of flavor with shallots and thyme.

6 tablespoons butter

2 shallots, diced

1 tablespoon finely chopped chipotle chiles

2 pounds frozen corn, thawed and drained

4 teaspoons fresh thyme or 2 teaspoons dried thyme

Salt and pepper to taste

 

In a large skillet, melt the butter over medium heat. Add the shallots and cook for 2 minutes, stirring. Add the chiles and stir. Add the corn and thyme. Cook, stirring often, until the corn is done. Season with salt and pepper.
